Today I did some good eating. I’m going to share with you my meals. Starting with breakfast and ending with my dessert!
Breakfast: This morning I had a lovely egg over easy, cooked in a 1/2 tsp butter, sprinkled with salt and pepper. I toasted a whole wheat English muffin, spread it with 1 tsp butter and enjoyed this breakfast with most of a Honeybell, a sort of tangelo. A made my mom eat 1/4 of the Honeybell, I also made her an egg.
Lunch: When it was time for lunch I had a plain, non-fat, Greek yogurt with some cranberries, pecans and maple syrup. This was great, I love cranberries and pecans together! it is one of my favorite food combinations. In my holiday cookie recipe (http://jessdudleyeats.wordpress.com/2009/12/05/holiday-cookies-love-nuggets/) I use cranberries and pecans along with vanilla, cinnamon and chocolate chips. I am considering mixing up some yogurt with these treats inside, but I am afraid of cinnamon in yogurt. If you have tried it, let me know if it is a good idea!
Snack: Not much of a snack, but I had a cup of coffee. Milk and sugar. I made the coffee too bitter and it needed sugar so bad.
Dinner: I got home from class around 9pm and needed to have some dinner. So, after kissing my boyfriend hello, I checked out what Mom made for dinner. A salad with cucumber, zucchini, tomato, avocado, sautéed onions, sautéed mushrooms and some roasted chicken. I drizzled on some olive oil and balsamic vinegar.
Dessert: Simple dessert of one chocolate chip cookie, one banana and a cup of milk.
