The last four years I’ve shared my birthday month with my son! There’s been a lot to celebrate in these past four years, but also a lot of “will you eat it if I put sprinkles on it” as well. Funfetti is a lifestyle my friends. A lifestyle lived by many families as they crusade against picky eating!

As a result of our efforts to get our children to eat the rainbow, I have this delightful recipe for funfetti waffles that I think you’ll love — we do! They’re pretty easy to make and they’re perfect for adding some color and fun to your mornings. I adapted the recipe from this one from King Arthur Baking.
One thing I will mention is that I love my waffles super crispy! For years I was using a waffle iron my dad got me which was good. But after over a decade of use it was no longer up for the job. So I set my eyes on this one from KRUPS and put on my Christmas list this year! I’m very grateful that my husband gave it to me! It makes just the crispiest waffles and as a busy mom, I love that the irons pop out to be washed in the dishwasher! The best part is that there’s a little dial that lets you set how toasty you want your waffles to come out. So if you’re an extra crispy waffle lover, like me, you can just turn that dial up!
Here’s what you’ll need:
- 2 large eggs
- 1 3/4 cups milk (I use 2% or whole)
- 1 tablespoon lemon juice
- 8 tablespoons butter, melted, cooled
- 2 teaspoons Vanilla Extract
- 1 3/4 cups all purpose flour
- 2 tablespoons (25g) granulated sugar*
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon table salt
- 1/2 cup almond flour
- 1/2 cup rainbow sprinkles
Steps
- Plug in your waffle maker
- Mix together the eggs, milk, lemon juice, melted butter, and vanilla.
- In a separate bowl whisk together the dry ingredients.
- Combine the wet and dry ingredients, stirring just until nearly smooth; a few small lumps may remain.
- Spray your waffle iron with a non-stick cooking spray before preheating it. Cook waffles according to the manufacturer’s directions. If using the KRUPS waffle maker, use about 2 cups batter spread evenly across the four panels; cook until the iron stops steaming and beeps.


These funfetti waffles are seriously so good. The sprinkles add a fun twist to the classic waffle recipe, and they’re perfect for brightening up your morning and getting your kid to actually eat the whole thing. I love making these waffles on the weekends when we have a little extra time to enjoy breakfast. We save the extras in the freezer for easy weekday breakfasts – just pop them in the toaster! They’re also great for serving to guests or for special occasions like birthdays!
