I love guacamole. It’s green and green is my favorite color. The problem with guacamole is the variety of things people add to it that are just not that good for you. My mom for instance, she likes to use a mix of sour cream and mayonnaise to make it super creamy. And it’s so good. Back a few years ago I made friends with some vegans, and they taught me to make guacamole that was not only vegan friendly, but much more waist friendly than my mom’s version! Here it is!
Ingredients:
1 avocado, pitted, skinned and mashed
1 large clove garlic, minced
1/2 tsp dried cilantro or 1 tsp fresh cilantro, chopped
Dash of salt
Dash of pepper
Juice from 1/2 lime
And if you like a little kick, I recommend adding a TBSP of your favorite salsa.
Place all ingredients in a bowl and mix. To mash the avocado, I use the potato masher, that thing has endless mashing potential!
